Voila! The coconut cake. It turned out well...I would make it again but it is a very VERY rich cake...and although the frosting flavor was good, the consistency was terrible and it was very runny so I had to have the cake set up in the fridge first.

Looks great! Scott "hates" coconut so it's not a flavor I get to have very often. I guess it wasn't a good weekend for frosting, I had a hard time with mine too.
Yum! How delicious... sounds like you guys had a weekend full of good food.
